Strawberry Red Curry Paste

Ingredients

  • 1/2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 red bell pepper
  • 2-4 medium red hot chilies
  • 1 stalk lemongrass (root and tip trimmed, then chopped)
  • 1-2 Tbsp fresh roughly chopped ginger
  • 3 cloves garlic
  • 1 Tbsp fresh turmeric (or 1 tsp ground turmeric)
  • The zest and juice and zest of one lemon or lime
  • 1/2 cup diced onions, shallots or green onions (about 6)
  • 2-3 Tbsp neutral flavored oil
  • 3 Tbsp Bonne Maman Intense Strawberry Spread
  • Good pinch salt and pepper

If you’re feeling adventurous in the kitchen you may want to think about making your own curry paste. This Thai Style Red Curry Paste encompasses all the spicy and fragrant flavours you would want in a red curry while the More fruit, less sugar Strawberry Spread helps to balance out the heat. Bonus, all of the ingredients can be thrown in a blender or food processor for an instant paste!

Makes: 2 x 175mL jars
Freezer friendly: 1 month
Fridge: 10 Days

METHOD

Add all ingredients into a blender or food processor, and blend until smooth.
Store curry paste in a jar in the refrigerator for up to 10 days. For longer storage, transfer paste to a freezer safe storage container for up to 1 month.
This curry paste is ideal for curries, soups, sauces, salad dressings, and more!
