- 75 g round rice (Arborio style)
- 300 ml coconut milk
- 200 ml vegetable milk of your choice
- 30 g sugar
- 1 tsp vanilla extract
- Bonne Maman® Pineapple and Passion Fruit Jam
- 1 mango
- Crushed peanuts
- Grated coconut
In a saucepan, bring the coconut milk and the vegetable milk to a boil. Add the vanilla.
Pour in the sugar and the rice and cook over low heat for 15 to 20 minutes until the milk has evaporated.
Remove from heat and let the rice cool down. In the bottom of ramekins, spread a layer of Bonne Maman® Pineapple and Passion Fruit Jam. Pour the rice pudding over it, then decorate with mango slices and sprinkle with crushed peanuts and lightly toasted grated coconut (optional). Leave to cool in the refrigerator before serving.
