Overnight Oats - Recipe by @eatwithjessie

Ingredients for the oats:

  • ½ cup rolled oats
  • ½ cup coconut milk
  • ¼ cup full fat vanilla yogurt
  • 1 tsp vanilla
  • 1 Tbsp maple syrup
  • ¼ tsp cinnamon

Toppings: Peaches and cream

Overnight oats are trendy, yes, but for a good reason, these oats ‘cook’ themselves. The grains hydrate and soften overnight, and when you wake up you’ve just got to reach in the fridge for a cold oatmeal bowl of goodness. It’s super versatile because you can add fun toppings, hydrate the oats in many ways, and layer tons of flavors.


Mix all ingredients in a covered container or jar, and let sit for the oats to hydrate in the refrigerator for 8-10 hrs. When ready to eat, add your toppings with the amount desired.
