Syrup (for 3 cocktails):
- 30ml maple syrup
- 125ml no-sugar-added pomegranate juice
- 30ml water
- 1 heaped tablespoon Bonne Maman Orange Marmalade
- Star anise
For 1 cocktail glass:
- 30ml orange juice
- 30ml lemon juice
- 150ml no-sugar-added pomegranate juice
- 60ml water
- 4 to 5 ice cubes
- 6 teaspoons syrup
Garnish:
- White sugar
- Cinnamon stick
- Star anise
- Orange
Preparation:
- In a saucepan, bring maple syrup, pomegranate juice and water to the boil. Add the Bonne Maman Orange Marmalade and stir. Add the star anise and thicken the mixture to the consistency of syrup. Leave to cool.
- Squeeze an orange and a lemon, then strain the fresh juices through a sieve to remove all the pulp.
- In a shaker or other container, mix 30ml lemon juice, 30ml orange juice, 150ml pomegranate juice, 60ml water and 6 teaspoons syrup.
- Pass a citrus fruit around the rim of the glass, before placing it in the white sugar.
- Place at least 4 ice cubes in the glass, and pour the cocktail.
- Garnish your cocktail with a slice of orange, a cinnamon stick and star anise. Enjoy.
Tips:
- If the syrup thickens too quickly, add a little water.
- Ice cubes are essential. They add freshness, but also subtly dilute the deliberately concentraded cocktail, bringing out its full flavour.
